This course is for those who want to further their training within the hospitality and professional cookery industry.

The course covers:
How to prepare, cook and finish various complex dishes; Fish and shellfish; Meat and poultry; Patisserie.

You will learn in practical and theoretical classes, and in the college's award-winning Terrace Restaurant. Some evening work is required.

Entry Requirements

Intermediate Professional Cookery (Level 5). Interview and written test.
