The National Progression Award (NPA) in Professional Cookery Level 5 course is designed to provide you with practical and flexible knowledge, understanding and skills which are relevant in the catering industry. This course is purpose built to provide you with all the skills needed to choose your next step on your career journey as a professional chef or baker. The course is aimed at those who are looking to re-enter education or employment in the catering industry and is flexible enough to allow you to work part-time, whilst attending college.

Units include:
Professional cookery: Practical; Food hygiene for the hospitality industry; Pastry; Stocks, soups and sauces; Vegetarian cookery; First aid at work; REHIS Elementary Food Hygiene Certificate; Working safely; Cold preparations; Guidance.

Entry Requirements

Professional Cookery (NPA) (Level 4). Interview.

Progression Routes

NQ Professional Cookery (Level 6) or employment in the industry.
