Throughout the course you will develop your culinary skills to an advanced level and gain the knowledge you will need for a supervisory role. In the second year you will combine culinary expertise and managerial skills. The course contains practical and theory units which also cover event organisation.
Experience in the hospitality industry is an integral part of the course and you will work towards the Industrial Experience unit. Students will also have the opportunity to gain a Personal Licence Holder certificate.
Example modules: Management of Food and Beverage Operations; Hospitality Financial Accounting; Gastronomy; Scottish Licensing Law; Kitchen Planning and Design.
