This course focuses on developing your ability to control cookery processes when training in our professional kitchen and learning the underpinning knowledge in a classroom. You will also get a taste of Front of House when serving paying customers in Zest, the Training Restaurant.
Units are delivered with a mix of practical and theoretical elements and cover the following areas:
Boiling, poaching and steaming; Baking, Roasting and Grilling; Cold Food preparation; Regeneration; Kitchen equipment; Employability; Understanding menus; Food and Beverage Service; Food Safety; Core skills – Communication, IT and Numeracy.
No formal entry requirements. Advice Session with pre-entry test. Interview
