This course aims to provide students with a practical flexible programme of knowledge, understanding and practical skills relevant to the Catering Industry. It is aimed at young people who have recently left school and mature adult returners who are looking to re-enter education or employment in a professional kitchen and further their career in the catering industry.

Content: Cookery Processes; Food Preparation Techniques; Integrated Production Cookery; Cold Preparations; Pastry; R.E.H.I.S. Elementary Food Hygiene Certificate. Group Awards in: R.E.H.I.S Elementary Food Hygiene.

Entry Requirements

NQ Professional or Practical Cookery (Level 4). Experience is an advantage. Interview.
