This professional cookery course prepares you for entry to the hospitality industry at a basic level, or as preparation for further study.
The emphasis is on gaining practical cookery skills and experience of the hospitality industry.
Units include:
Craft Baking; Cookery Processes; Training in a Realistic Working Environment; Working in a Partie System for the Training Restaurant; Food Hygiene; Food Preparation Techniques; Meal Production and Design; Pastry; Service of Food and Drink; Stocks and Sauces; Meal Production and Design; Enhanced by other cookery and Hospitality related units.
No formal entry requirements, however an interest in the industry is essential. A relevant qualification at SCQF Level 4 could be advantageous. Interview.
NQ Professional Cookery (Level 6) or employment in the industry.
