This 20-hour course will provide students with the experience of preparing a variety of different dishes, ranging from local specialities to exotic dishes from afar. Specific content may include, but is not limited to:
Complex presentation of dishes, Menu planning, Special dietary requirements, Cooking for guests,
Kitchen management, Foods of the World, Scottish cookery, Spices and herbs, Success with pastry,
The student should have an interest in cookery and food preparation, and a wish to develop their knowledge and skills beyond the beginner level.
